500 g wheat flour (preferably type 550 or 650)
300 ml lukewarm water
7 g instant yeast or 25 g fresh yeast
10 g salt

Making the sourdough starter (if using fresh yeast):
In a bowl, dissolve the yeast in warm water with added sugar. Let it sit for about 10 minutes, until the yeast begins to foam. If using instant yeast, you can skip this step and simply add the yeast to the flour.
To make the dough:
In a large bowl, whisk together the flour and salt. Add the sourdough starter (or instant yeast) and olive oil. Knead the dough for about 10 minutes until it becomes smooth and elastic. If the dough is too sticky, add a little more flour, but try not to add too much – the dough should be slightly moist.
Dough Proofing:
Shape the dough into a ball and place it in a lightly oiled bowl. Cover with a tea towel and let it rest for 1 to 1.5 hours in a warm place until it doubles in size.
To shape baguettes:
Once the dough has risen, remove it from the dough onto a floured surface. Divide the dough into two equal pieces and shape them into long, narrow baguettes. Place them on a baking sheet lined with parchment paper. If you want a classic look for your baguettes, you can make several slits in each one.
Bake:
Before placing the baguettes in the oven, let them rise for another 20 minutes. Preheat the oven to 220°C (if using a fan oven, then to 200°C). Place the baguettes in the oven on the middle rack and bake for 25 to 30 minutes, until golden brown and crispy.
