Instructions
- Prepare the Meat Mixture:
- In a large mixing bowl, combine the minced pork and minced chicken.
- Add the finely chopped onion, salt, ground pepper, paprika, and dried basil to the meat. Mix thoroughly until well combined.
- Cover the mixture and let it rest in the refrigerator for at least 30 minutes to allow the flavors to meld together.
- Shape the Kebabs:
- After the meat mixture has rested, shape it into small kebabs or patties, depending on your preference.
- If using skewers, form the meat mixture around the skewers, pressing firmly to ensure it adheres well.
- Prepare the Onion Marinade:
- In a bowl, combine the thinly sliced onion, red onion, and chopped parsley.
- Add the salt, sugar, and lemon juice to the onions, and mix well.
- Allow the onions to marinate for at least 15-20 minutes, stirring occasionally.
- Cook the Kebabs:
- Heat a grill or a large skillet over medium heat. Lightly oil the grates or skillet.
- Cook the kebabs for about 5-7 minutes on each side, or until fully cooked and browned on the outside.
- If cooking on skewers, rotate them occasionally to ensure even cooking.
- Prepare the Sauce:
- In a small bowl, combine the vegetable oil and ketchup. Stir well to create a smooth sauce.
- Add chopped fresh parsley to the sauce to taste.
- Serve:
- Once the kebabs are cooked, serve them hot with the onion marinade on the side.
- Drizzle the ketchup sauce over the kebabs or serve it as a dipping sauce.
- Garnish with additional fresh parsley if desired.
