- Mix the Dough:
- In a large bowl, combine the flour, baking soda, and kosher salt.
- Gradually add most of the warm water to the dry ingredients, mixing continuously. The dough should become sticky, similar to pizza dough. If needed, add the remaining water while stirring until you achieve this consistency.
- Knead the Dough:
- Transfer the dough to a floured surface and knead until smooth, about 5-7 minutes.
- Let the Dough Rest:
- Place the dough in an oiled bowl, cover it with a damp cloth, and let it rest for 30 to 60 minutes.
- Divide and Roll:
- After resting, divide the dough into six equal portions.
- On a floured surface, roll each portion into a thin round, about the thickness of a tortilla.
- Cook the Flatbread:
- Heat a griddle or skillet over medium-high heat (350°F or 175°C).
- Place one flatbread at a time on the hot griddle. Cook until you see a few patches of golden brown, then flip and cook the other side until golden and cooked through.
- Cool and Store:
- Let the cooked flatbreads cool on a wire rack.
- Store any leftovers in an airtight container at room temperature for a few days, or freeze for longer storage.
