1. Prepare the Dough

- In a large mixing bowl, combine the milk, water, yeast, and sugar. Stir until well mixed.
- Add the oil and the whole egg (reserve the yolk for topping) to the mixture, and mix well.
- Gradually add the flour and salt, mixing until a soft dough forms.
- Knead the dough on a floured surface until smooth. Cover the bowl with a clean cloth and let the dough rise in a warm place for about 1 hour, or until it has doubled in size.
2. Prepare the Filling
- Boil the potatoes until tender. Drain and mash them until smooth.
- Add the butter, milk, and salt to the mashed potatoes, mixing until well combined.
- Stir in the chopped parsley.
3. Shape the Pastries
- Preheat your oven to 180°C (350°F).
- Punch down the risen dough and divide it into 3 equal portions.
- Roll out each portion into a rectangle on a lightly floured surface.
- Spread the potato filling evenly over each rectangle of dough.
- Roll the dough up tightly into logs, then cut into individual pieces using a dough cutter or knife.
4. Prepare for Baking
- Place the cut pastries on a baking tray lined with parchment paper.
- Brush the tops with a mixture of the reserved egg yolk and milk.
5. Bake
