Preheat oven to 380°F (190°C).
Prepare dry ingredients:
In a large bowl, whisk together 1 cup oat flour, 1/2 cup almonds, 1/2 cup cranberries, and the zest of 1 lemon. Make sure all the dry ingredients are well combined.
Add wet ingredients:
Add 1 teaspoon vanilla, 1 egg, and 2 tablespoons melted butter to the dry ingredients. Mix well until well combined and forms a ball.
Form cookies:
Using your hands or a small ball, form the dough into balls and place on a baking sheet lined with baking paper. Flatten slightly with your fingers or a fork.
Bake:
Place the cookies in the preheated oven and bake for 30 minutes, or until golden and cooked through.
Cool:
Remove the cookies from the oven and let them cool on a wire rack for about 15 minutes.
