Step 3: Assemble the Pockets
Fill the Tortillas:

Fold the Tortillas:
Fold the sides of the tortilla over the filling, then fold the bottom up and roll it tightly like a burrito. Place the folded side down on a baking sheet.
Prepare for Baking:
Lightly grease a baking sheet with nonstick spray. Arrange the rolled tortillas on the sheet, ensuring they don’t touch each other.
Brush with Butter:
Lightly brush the tops of the tortillas with melted butter to help them crisp up and turn golden in the oven.
Step 4: Bake and Serve
Bake:
Place the baking sheet in the preheated oven. Bake for 15 minutes, or until the tortillas are golden brown and crispy.
Serve:
Let the pockets cool for a minute before serving. Garnish with shredded lettuce, additional salsa, sour cream, and sliced olives if desired. Serve them warm for the best experience.
