For the Cheesecake Filling:
8 oz cream cheese, softened ๐Ÿง€
1/2 cup powdered sugar ๐Ÿฅ
1 tsp vanilla extract ๐ŸŒฟ
1 cup heavy cream ๐Ÿฅ›
For the Passionfruit Topping:
1 cup passionfruit pulp (fresh or frozen) ๐Ÿˆ
1/4 cup granulated sugar ๐Ÿฌ
1 tbsp cornstarch ๐ŸŒฝ
1/4 cup water ๐Ÿ’ง
Instructions:
Preheat Oven and Prepare Pan:
1๏ธโƒฃ Preheat your oven to 350ยฐF (175ยฐC). Grease a 10ร—15-inch jelly roll pan and line it with parchment paper. Grease the parchment paper as well.
Make the Cake:
2๏ธโƒฃ In a large bowl, beat egg yolks with 1/2 cup of granulated sugar until thick and pale yellow. Stir in the vanilla extract and a few drops of yellow food coloring (if using).
3๏ธโƒฃ In a separate bowl, sift together cake flour, salt, and baking powder. Fold in the diced mango and shredded coconut (if using).
