- Preheat Your Oven: Start by preheating your oven to 350°F (175°C). Grease a 4×8 inch loaf pan with a bit of coconut oil.
- Mash the Bananas: In a large mixing bowl, mash the overripe bananas with a fork until smooth. Stir in the melted coconut oil.
- Mix in the Ingredients: Add the baking soda and salt to the banana mixture and mix well. Stir in the vanilla extract and beaten egg. Gradually mix in the whole wheat flour until everything is well combined. If you’re using nuts or dried fruits, fold them into the batter at this point.
- Pour into the Pan: Pour the batter into the greased loaf pan and spread it out evenly.
- Bake: Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts browning too quickly, cover it with aluminum foil to prevent burning.
- Cool and Serve: Let the banana bread cool in the pan for a few minutes, then transfer it to a wire rack to cool completely before slicing.
