Preparation
1. Prepare the ingredients
Separate the eggs: yolks on one side, egg whites on the other. Make sure the bowl containing the egg whites is free of any egg yolk residue for optimal mixing.
Break the biscuits: If you’re using Nutella or speculaas biscuits, break them into small pieces, but not too finely, so they stay crispy.
2. Make the cream
Mix the egg yolks and sugar: Beat the egg yolks with the sugar until the mixture is white and creamy.
Add the mascarpone and Nutella: Gently fold the mascarpone into the egg yolk mixture to keep the consistency light and fluffy. Then gradually add the Nutella until a smooth cream forms.
3. Assemble the tiramisu
Beat the egg whites until stiff peaks form: Make sure they’re very stiff so they don’t break during mixing.
Gently fold the beaten egg whites into the mascarpone mixture to prevent them from breaking.
