ONE POT CHICKEN BURRITO BOWL

Ingredients (Serves 4–6)
- 1 lb boneless skinless chicken breasts or thighs, diced
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup long grain rice (uncooked)
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup frozen corn
- 1 (14.5 oz) can diced tomatoes (with juices)
- 2 1/2 cups chicken broth (or water with bouillon)
- 1 1/2 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt & pepper, to taste
- Juice of 1 lime
- 1/2 cup shredded cheese (cheddar, Monterey jack, or Mexican blend)
- Optional toppings: avocado, sour cream, cilantro, hot sauce, green onions
