4 cups all-purpose flour (plus more if needed)
For the Peach Pie Filling:
2 cups fresh or canned peaches, diced (drained if canned)
1/4 cup brown sugar
1 teaspoon ground cinnamon
1 tablespoon cornstarch
1 teaspoon lemon juice
1/2 teaspoon vanilla extract
For the Cinnamon-Sugar Filling:
1/3 cup unsalted butter, softened
1/2 cup brown sugar
1 tablespoon ground cinnamon
For the Cream Cheese Glaze:
4 oz cream cheese, softened
1 cup powdered sugar
1/2 teaspoon vanilla extract
2–3 tablespoons milk (adjust for consistency)
