Step 1: Prepare the Filling

Add Powdered Sugar and Vanilla: Gradually add 1/4 cup powdered sugar and 1 tsp vanilla extract to the cream cheese. Continue to beat until the mixture is well combined and smooth.
Fold in the Raspberries: Gently fold in 1 cup of fresh raspberries. Be careful not to crush them too much as you want to maintain some of their shape for bursts of fresh flavor in each bite.
Step 2: Form the Bites
Scoop the Mixture: Using a small spoon or a melon baller, scoop out portions of the cream cheese mixture. Aim for portions that are about the size of a small marble or 1 inch in diameter.
Form into Balls: Roll each portion between your hands to form small balls. Place the formed balls on a baking sheet lined with parchment paper. This step can be a bit messy, but the end result is worth it!
Step 3: Chill the Bites
Freeze: Place the baking sheet with the cream cheese balls in the freezer for about 1 hour, or until they are firm. This helps them hold their shape when you coat them later.
