Ingredients
For the Chicken & Soup:
- 2 lbs boneless, skinless chicken breasts or thighs
- 4 cups low-sodium chicken broth
- 1 can (10.5 oz) cream of chicken soup (or homemade substitute)
- 1 medium onion, chopped
- 3 carrots, sliced
- 2 celery stalks, sliced
- 2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- Salt & black pepper to taste
- 1 cup frozen peas (optional)
For the Dumplings:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp salt
- 1 tbsp dried parsley (or 2 tbsp fresh)
- ¾ cup milk
- ¼ cup butter, melted
