This is the kind of cake that doesn’t require baking experience. If you can stir a spoon and peel an apple, you’re good to go. It’s the ideal beginner cake but even pros like me love it for how well it bakes and how good it tastes.

½ cup neutral flavored oil (like sunflower or canola)

1 packet baking powder (16g)
2 ½ cups all purpose flour
1 tsp lemon or orange flavoring (or zest of 1 citrus)
