▪️ Bain-marie:
Place the cake tin in a larger baking sheet and add hot water to the sheet until it is about halfway up the tin. This will create a moist environment for the cake to bake, making it tender.
▪️ Baking:
Bake the cake in the preheated oven for about 60 minutes. Check the doneness by inserting a toothpick in the center: it should come out clean.
If the top of the cake browns too quickly, you can cover it with aluminum foil for the last 15 minutes of baking.
▪️ Cooling:
Once baked, remove the pan from the oven and tap it lightly on the countertop several times to release the steam. This helps prevent the cake from shrinking.
Let the cake cool at room temperature in the pan for about 10-15 minutes, then turn it out onto a wire rack.
