Garlicky Southern Chicken Scampi Over Buttery Parmesan Grits

1 ½ lbs boneless, skinless chicken breast, thinly sliced

1/4 cup dry white wine (or chicken broth)
Juice of 1 lemon
Zest of 1 lemon
1/4 cup fresh parsley, chopped
Salt and pepper, to taste
For the Creamy Parmesan Grits:
1 cup stone-ground grits
4 cups water or chicken broth
1 cup whole milk
1/2 cup heavy cream
1 cup grated Parmesan cheese
2 tablespoons butter
Salt and black pepper, to taste
