- Layer Vegetables and Cheese:
- Place the shredded sweet potato, red bell pepper, and green onions in an even layer in the prepared pan.
- Sprinkle the grated cheddar cheese evenly over the vegetables.
- Mix Wet Ingredients:
- In a blender, combine cottage cheese, milk, eggs, mustard, salt, pepper, ground nutmeg, and oats.
- Blend until the ingredients are completely combined and smooth.
- Combine and Bake:
- Pour the blended mixture over the layered veggies and cheese.
- Use a fork to gently move the vegetables around, allowing the liquid mixture to distribute evenly.
- Place the pan in the preheated oven and bake for 35 minutes or until the quiche is set and the top is lightly browned.
- Cool and Serve:
