  1. Preheat the Oven: Preheat your oven to 350Β°F (180Β°C).
  2. Prepare the Pan: Grease an 8-inch (20 cm) baking dish or cast-iron skillet.
  3. Layer Vegetables and Cheese:
    • Place the shredded sweet potato, red bell pepper, and green onions in an even layer in the prepared pan.
    • Sprinkle the grated cheddar cheese evenly over the vegetables.
  4. Mix Wet Ingredients:
    • In a blender, combine cottage cheese, milk, eggs, mustard, salt, pepper, ground nutmeg, and oats.
    • Blend until the ingredients are completely combined and smooth.
  5. Combine and Bake:
    • Pour the blended mixture over the layered veggies and cheese.
    • Use a fork to gently move the vegetables around, allowing the liquid mixture to distribute evenly.
    • Place the pan in the preheated oven and bake for 35 minutes or until the quiche is set and the top is lightly browned.
  6. Cool and Serve:
